Black Hide Meat Co. is a family-run beef operation producing premium black beef with exceptional eating quality. Our cattle are pasture-raised, handled using low-stress practices, and carefully managed from paddock to plate to deliver beef that’s tender, full of flavour, and consistently reliable.
Our Story
We’re the Symonds family, Matt, Jillien, and our three kids, and we call Rathlyn home.
Our 6,200-acre property lies 30 km south-east of Wandoan, on the rich black-soil country the Western Downs is famous for.
Rathlyn is organically certified with SXC and known for producing exceptional grass-fed beef. Our cattle graze freely on Bambatsi, Queensland Blue, Gayndah Buffel and Marine Couch, the kind of pasture that builds rich flavour from the ground up.
We’re proud to raise our animals naturally. No antibiotics, no grain, no shortcuts. Just low-stress handling, clean pasture, and plenty of space under a big Queensland sky.

Home to our certified organic black cattle, raised on certified organic pasture, where the organic chain can be maintained through processing.

A free-range operation running F1 cattle under the same welfare-focused, pasture-based approach.

Supports our wider operations with free-range Santa Gertrudis cattle.
While our broader operations include different breeds, our eating program and brand focus remain centred on premium black beef genetics and paddock-to-plate quality.
Our Beef
At Black Hide Meat Co., how we raise our cattle matters just as much as how the beef performs on the plate. All cattle are pasture-raised and handled using low-stress practices that support welfare, consistency, and flavour.
We offer two beef options depending on processing availability and customer requirements.

100% Free-Range & Grass-Fed
Our free-range beef is sourced from Glenelg and, on occasion, Rathlyn when organic processing cannot be guaranteed.
While not certified organic, these cattle are still pasture-raised and handled using the same welfare-focused, low-stress approach, delivering excellent flavour and consistent eating quality.

Certified Organic
Our certified organic beef is sourced from Rathlyn, where cattle are raised on certified organic pasture using low-stress, ethical farming practices.
When the organic chain can be maintained through processing, this beef is available as certified organic.

Pasture Raised & Finished
All Black Hide Meat Co. cattle are pasture-raised and handled using low-stress livestock management practices.
Our focus is on animal welfare, natural behaviour, and calm handling from paddock through to processing, because cattle that live well, eat well.

Our F1 Wagyu × Angus breeding program combines the best of both breeds:
Wagyu for heat tolerance, resilience, and the ability to thrive during tougher climatic conditions.
Angus for temperament, mothering ability, and consistently tender eating quality.
Our genetics can be traced directly back to the renowned Wagyu sire Itoshigenami, giving our herd elite quality without the heaviness of grain-fed marbling.

Beef supply and availability vary seasonally and are influenced by processing schedules and customer requirements.
Black Hide Meat Co. offers both certified organic and free-range beef options. Carcasses are available in various sizes on request, and non-organic free-range boxed beef options can also be discussed.
Processing, freight, and delivery logistics are organised on enquiry to maintain flexibility and ensure quality is never compromised.
